Memorial Day BBQ - Yum!
Hubby grilled today and it was divine, as usual. I really wish you all could taste his BBQ porksteaks. They are just incredible! I am not sure exactly what he does to them and he makes his own sauce. He said he is not sharing the recipe though LOL.
As good as it all is, it was not the healthiest of meals. I told Hubby and T we would have to eat extra healthy the rest of the week to make up for this. It was so worth it though.
The potatoes I can share with you though since I am the one who does all the prep work on them. Hubby does cook them on the grill though in the end. They are super easy and taste wonderful every time. You can easily adapt the amount of potatoes for your family and adjust the seasonings if you want even to match the rest of the meal you are serving them with. Today I sliced everything, but sometimes I dice instead too.
Ingredients:
Extra virgin olive oil
8 new red potatoes, thinly sliced
1 small white onion, thinly sliced
4 cloves garlic, thinly sliced
kosher salt
fresh ground black pepper
paprika
Lay out a sheet of aluminum foil (we use the Reynolds non-stick). Drizzle a little oil and spread around. Then lay out half your potatoes, then half the onion, half the garlic, salt, pepper, and paprika. Now a bit more olive oil and then layer the rest of the ingredients again. Finally a final drizzle of olive oil.
Now place another sheet of foil on top and fold the sides to make a packet. Hubby recommends folding the corners in at the end also. Cook on the grill over a medium-low heat for about 30 to 45 minutes. Flip the packet over once about half way thru the cooking. You can cook them on a higher temperature for a shorter time also.
You are just looking for them to be tender, but have that nice crispy caramelized areas on the outer potatoes. So yummy! This will serve 4 people easily. These are always a crowd pleaser! If you need to make a larger quantity make multiple packets though so it is easier to flip them and get them all cooked evenly.

Everything looks yummy, esp the potatoes! We're grilling in a bit....just the basics though...hamburgers, hot dogs, pasta salad & baked beans. Enjoy the rest of your day!

Looks good. The neighbors put together a last minute BBQ on Sunday night, really good.
Everything looks soooo great. It has been a long time since we have Bar B Qued but I love it.
The Potatoes sound yummy, they remind me of Potatoes we made when we were in girl scouts.. Foil dinners..
