The Christmas Day Menu

Christmas Day we are having guests. When we first wake up, Taylor, Hubby, and I will open up our gifts from Santa and each other. Then later in the day Hubby’s parents, my parents, and my brother will be coming over. We will have our big meal late in the afternoon and open a few gifts and just relax and enjoy each other’s company. I’m thinking maybe we could get some Wii contests going and work off some of the meal too.

Christmas Eve is at my parent’s house with my dad’s side of the family and it’s all types of snacks and such so everyone nibbles all night long. I’m making party rye bread pizzas because it is a favorite of my moms. We also have a Christmas brunch on Sunday to celebrate with my mom’s side of the family. For that I’m making another artichoke and spinach quiche!

Here is what is on my menu for Christmas Day:

Maple-Pomegranate Glazed Ham
I found this glaze recipe in Woman’s Day this year and thought it sounded yummy. I just made the glaze today and it tastes wonderful. I followed the instructions, but also added some fresh black pepper. When you taste it you might want to add salt, but don’t – remember it is going on the ham which will be salty enough.

Twice Baked Potatoes
Taylor requests this each year. Very simple to make, 1 whole potato will serve 2, plus add an extra potato or two for extra “stuffing”. Just bake your potatoes (brown baking potatoes) in the oven at 350°F for about an hour or so. I just wash them off, dry them, and put them right on the rack. Let them cool. Slice in half lengthwise and scoop out the insides. Leave 1/8″ to 1/4″ of potato in the skin though to keep them sturdy enough. Now mash your potato insides along with butter, sour cream milk, salt, pepper, lots of cheese and whatever else you want (I love lots of roasted garlic too). Simply spoon your stuffing back into the potato shells now. You can do all of this the day ahead. Then the day of, bake again in the oven for 45 minutes at 350°F. You can sprinkle some extra cheese on top and add some chives also for a pretty look.

Chipotle-Cranberry Sauce
I found the recipe in Bon Appetit Magazine. On Thanksgiving I made this also and it was a big hit and Hubby requested I make it again for Xmas

Broccoli with Smoked Paprika, Almonds, and Garlic
This is another Bon Appetit Magazine recipe this year. The original calls for broccolini, but that is hard to find at my local grocery store so I’m using regular fresh broccoli. I’m also using sliced almonds because I already have those on hand.

Linda’s Seven Layer Salad
My mother-in-law, Linda, makes a wonderful seven layer salad that was always a favorite of Hubby’s growing up. This one has lettuce, cauliflower, cheese, onions, bacon, etc. She makes it better than anyone and so she is bringing that to share with all of us.

Corn
Plain and simple corn. My mom sometimes is a bit picky, but I know she loves corn and so I’m making this because I know she will eat it! Nothing fancy at all, just butter, salt, and pepper.

King’s Hawaiian Dinner Rolls
I was going to make my own clover-leaf rolls, but Taylor asked if we could pretty-please have King’s Hawaiian Dinner Rolls again.

Mom’s Dessert
My mom is bringing dessert this year, I think she may be making a carrot cake with cream cheese icing (yum!), but not 100% sure. I’m sure whatever she brings will be a delicious finish to our meal.
