Weekly Menu

I always see Jenn from Frugal Upstate posting her weekly menu plan so I thought I would share mine for the week since I just made it last night.

When I make my menu for the week I sit down with the grocery ad. I look at the meat and produce sections primarily to see what is on special and try to make some meals around that if I can. That helps save some money. Varying the meats in our meals is another thing I try to do. I don’t like freezing meat – well actually I don’t like thawing meat – so we tend to have the things that don’t have fresh meat in them later in the week’s plan.

Tuesday
Chevy’s Mexican Restaurant
Tonight we are going out to eat because it is Taylor’s 1st day back at public school. Always on his first and last day of school he gets to pick the meal and that can include going out to eat as well. He picked Chevy’s for tonight.

Wednesday
Roast Beef with Carrots and Onions, Mashed Potatoes, Gravy, Freshly Baked Bread
Usually my cousins come to eat on Wednesday night, although we are expecting snow this Wednesday. If they don’t come it just makes for yummy leftovers for lunches this week. This is one of my all time favorite meals.

Thursday
Mediterranean Chicken with Couscous and Broccoli Sauteed with Garlic
This is my version of a recipe from Emeril Lagasse’s Emeril Green show. I love the flavor of it all. Hubby likes the recipe if I make it with chicken thighs for him instead of chicken breasts.

Friday
Breaded Pork Chops, Creamed Corn, and Green Beans with Bacon Salt
My Grandma H. made the best breaded pork chops and always served creamed corn with them. Comfort foods are so nice during the winter. The green beans I make now with Bacon Salt instead of real bacon to save on the fat and calories – but still get a great bacon taste.

Saturday
Pizza
We love the DiGiorno Rising Crust Pizzas. Really a great flavor and much cheaper than ordering delivery pizzas. I cook them on pizza stones which makes them even better.

Sunday
Fettuccine with Shrimp Scampi and Broccoli, Garlic Bread
I’m going to be good and not have a big portion of this since it has cream and butter in it. This is one of Hubby and Taylor’s favorite things I make for them. The sauce really isn’t hard to make at all from scratch – so much better than any pre-made sauces.

Monday
Grilled Cheese and Tomato Soup
I grocery shop on Tuesday, so our menu week runs through Monday. Last night while making the menu I asked Hubby for ideas of nice warm and comforting foods and he requested this. Always a classic and loved by all!

I’m also picking up cornflakes, honey, and hot sauce and going to try to come up with something for the food challenge over at My Wooden Spoon for January. In my head I have an idea for a dessert with these 3 things – keep your fingers crossed!
