Beef Its Whats For DinnerDid you know February is “I Heart Beef” month? Well, it is, and well, frankly, I do heart beef! Thinking back to my childhood I know we ate a lot of beef. When I was very young there was a lot of hamburger (ground beef) but that changed as we got a little older. My parents were on a big steak kick for a long time when I was a teenager. My favorite meal was always roast beef with mashed potatoes and gravy and carrots (cooked with the roast). That always made me a happy camper when my mom made that or when I went anywhere where it was being served. BBQ’d is another favorite way to prepare beef for us. The best hamburger is grilled, smothered in BBQ sauce and let it cook in a bit to get all sticky (Hubby makes great sauce), then top with a slice of cheese. That all goes on an onion hamburger bun, then a few Ruffles original potato chips, and a spoonful of cold baked beans – finish with the top bun. I know it may sound crazy – but it is SO good!

    Living in the MidWest, beef of course was pretty prominent along with pork.
    I would say an 'everyday' experience for me is every fall we buy a 1/2 beef for the freezer- and we grill all winter long :)
    What I learned is from babies to the elderly we ALL need sufficient amounts of protein to maintain muscle mass!

    When I was pregnant, I craved Filet Mignon. Every Friday night we had Filet Friday. When we have filet now it reminds of me of that exciting time.

    I like the website Beef It's What's For Dinner website. because after having 2 boys I need to watch my weight and I always get confused on which cuts of meat are the leanest. I am going to print the chart out and put it with my menu planning stuff. Oh and Filet is very lean! yay!

    Being a frugalite, I love this idea! This is what I do when I purchase items on sale.

    One of my fav memories of making everyday occasions special with beef was Mom's homemade chili. YUMMY! There was one time that we were snowed in as kids. All we had to make chili with was ground turkey. IT WAS NOT GOOD! Nothing is better than yummy ground beef in Mom's chili and I now make it for my kids!

    My mother-in-law and my sister-in-law both ahve a family tradition: when it's their birthday(s) we all either go out to eat at a steak restaurant or we BBQ steaks in the back yard. We have been doing this for years! Every birthday is very special.

    I found the explanation of beef grading helpful. Now I will know what to look for on the label.

    One of my favorite meals my grandmother makes is her beef roast with pepporcorn crust and cranberry chutney. It's one of the first meals I cooked for my husband when we got married and it is written down in the family cookbook to pass down to my children one day.
    Also, I enjoyed getting this tip from the site:Stir-frying: Put beef in the freezer for about 30 minutes, or until just firm, to make the meat firm and easier to cut into strips.

    One of my favorite memories is going to Hiltop Steakhouse as a kid for our birthdays (My sister, brother and I were all a year apart and within the same week). They had three huge cows out front (They were fake of course) and we would always go sit on them and have our pictures taken. I think my Mom had pictures of us every year until we were in our teens.

    For New Yrs Eve each year since I have been either dating or married to my husband we have had a grand meal that included silets wrapped in bacon. It has been a wonderful special treat to mark the beginning of the new year.
    I found that the info •Be sure the packages do not contain excessive liquid – this can be an indication of problems with temperature or storage was very helpful for when we go shopping for beef.

    One everyday beef moment would be the time I learned how to turn ordinary flank steak into London Broil. It's a staple at our house.

    Here's something from the site that I already knew but bears reinforcement:

    •Any leftovers should be covered, refrigerate and eaten within 3 to 4 days – or frozen up to 3 months. Reheat to 165°F throughout. Stir foods during reheating to be sure that all the food reaches the appropriate temperature.

My mom would call us in and we would have worked up such a hunger playing in the field and she would have on the table the most tender beef pot roast I ever tasted. It was seasoned to perfection with cheesy mashed potatoes, and string beans on the side. We would finish all our food, so she never had to tell us to.
    Now, I am making beef dinners for my family, I make my mom's famous chuck roast, and also have my own specialties like T-Bone steak, and seasoned meatballs that would make you bite your tongue! lol

    When we were growing up, Dad grilled steaks every Monday. When I got old enough, he "let" me make a sauce to serve with the steak, but it always had to be different than the week before. We've continued that practice and it's always fun looking for new sauces to serve with our steaks.

    carve steak across the grain, that's something I have been doing for years. Some of my mother's greatest dishes were made with beef

    My favorite beef dish from my childhood was pot roast / roast beef with vegetables. I especially liked the chunks of onion that roasted with the carrots and the potatoes! All were delcious when served with the pot roast!

    From their web site, I learned that a lean cut of beef has less than 10 grams of fat and that sirloin steak is one of the most popular cuts of beef purchased at the grocery store.

    I buy ground meat and make patties and meatballs and freeze these. BBQ, I just take out the patties and put on the grill. I can use the meatballs for pasta dishes or sandwiches.

    My favorite memories are of the merinade my father would make from scratch and soak the London Broil in for 24 hours before grilling – made the most incredibly flavored and tender meat. The Steakhouse Steak at Home vidoe was very interesting and helpful.

    I learned that the website has a 'Featured Recipe' with ratings that are helpful for me to decide if my family will like it or not. I actually made the recipe tonight. It tasted great. My favorite memory with beef has to be my dad grilling steaks out on the patio during summer evenings when I was little. Loved the sizzle and the smoke smell running through the neighborhood. All the neighbors would smell the deliciousness and come over for a taste.

    I grew up in Indiana and my grandfather always worked two jobs, his second job was as a meat cutter at Marsh. My grandparents also raised chickens which I wouldn't eat after one day finding my Grandma plucking feathers out of one in the kitchen. After that, it was always hamburgers for me at their house, so almost all my memories include Grandma making me my special hamburger instead of what everyone else was having. This may not be exactly what you are looking for, but it sure was special to me as a child.

    At the site I found the following information I did not know: You may already know that your burgers should be cooked to a higher temperature than a steak or roast, but did you know that 160° is the optimal temperature for safe and savory ground beef?

    I am not a beef person, but my son sure is and my mother eats it almost every meal.

    From the website, I learned about marinating beef: "•ALWAYS marinate in the refrigerator, NEVER at room temperature. Be sure to use a food-safe plastic bag, non-reactive glass or a stainless steel container. Turn or stir the beef occasionally to allow even exposure to the marinade."

    Favorite memory with beef is the last party my folks had before they moved to south Florida. They had a huge prime rib roost stuffed with garlic and encrusted with spices, slowly roosted, dripping with yummy goodness. OMGosh it was wonderful. Twenty years later I still think it was the best I have ever had.

    Learned:
    Pan sauce is 1/2 cup beef broth, 1/4 balsamic vinegar, then they added some pepper jelly for spice, but I do not like hot peppers. Stir in pan with steak drippings and yum.

    I like to make a leaner Select choice steak tastier and more moist by stuffing the center with stuffing (especially a mushroom onion stuffing). Then serve it along with our favorite vegetables (especially with summer veggies grown in our own garden), and a pretty dessert like strawberry shortcake (hope I get lots of strawberry and rhubarb from my own garden this year, since I didn't last year).

    I grew up with beef. We were definitely at meat and potatoes family. Now I love using beef in recipes today, with my family. Just the other night, my kids helped me make beef fajitas! They are only 6 and 7 so they can't use a knife yet, but they helped stir and add seasonings. It seems like if they help, they eat better!

    And, from the site, I learned that you should always turn beef with tongs. If you pierce the meat with a fork, you lose valuable juices and your meat will dry out. Who knew?!

    Hello, we're big grillers and use are gas grill constantly. My husband is a meat and potatoes kind of guy, so we have beef 3-4 times a week.     I grew up a "town girl" but spent 20 years after that learning to be a "farm girl". A very valuable lesson for that farm girl was to learn how to pressure can beef and use it in many dishes. You can make any occasion special when you start with tender roast beef, and having in a jar on the shelf allows you to whip up something in a hurry for unexpected guests, while making it look as though you worked all day. The part of your website that explains the various cuts of beef is very helpful when going over the sale ads…that way I know whether what they are offering will work for my menu.

    Beef Pot Roast was something every cook (Mom or GrandMom in those days) in my family knew how to make well, so it was a staple for Sunday dinners. No matter who was hosting that day, the meat and veggies would go into the slow cooker and by the time we got back from church a luscious dinner would be ready.

    One thing I remember from the days when our kids were small and a lot of our beef meals consisted of hamburger, was that we'd get really creative with hamburgers.     Hi.

    A fond memory is when I was 9-10 years old. My mother created a "stew" that had two ingredients; a can of vegetable soup and ground beef. She would cook the ground beef, that was separated into little bits, in the soup by slowly simmering it. It was delicious. Well, at one point I was permitted to make the "stew"; I was so proud of myself. To this day I will make this dish because it is nourishing and filling.

    I found the "Safe Cooking Temperatures" chart helpful. From now on, I'll use a thermometer.

    As for making everyday occasions special – we love beef and I've gotten pretty good at cooking it I think but our favorite quick fix of beef is still a nice cut on the grill with nothing but salt and pepper.

    When my husband and I married, we were both poor students. So our honeymoon was at a small cabin only about an hour away but in a gorgeous area surrounded by nothing but trees. We bought a couple of steaks a small mom and pop store in the small town and grilled them back at the cabin.

    I don't know if it was the meat quality, the fact that we were usually too poor for steak, outdoor air, or the love high from being married the day before, but those were the BEST steaks we have EVER had.

    I also found the beef quality info on their website really helpful. I didn't know what the difference was, and just assumed it was kind of advertising lingo.

    One of my favorite memories is when my mom taught me how to make her delicious steak and peppers. Instead of just handing me her recipe, she took the time to show me, step by step, how it was done. Cooking together was special and made an ordinary event something I remembered forever.

    The most helpful information I found on the beef site was the info about the types of beef cuts. I used to be confused about which type to buy and this was very informative!

    I try to minimize the beef we eat in our household due to heart disease and high cholesterol running in the family but with low iron I find it easy to add extra lean ground beef in to our diets at least once a week with a quick taco salad! A whole head of lettuce chopped, a crumbled taco shell, a few scoops of beef, a few scoops of salsa and I get my iron with a tasty low fat, low cholesterol meal! My better half would choose the fattiest cuts of beef every night if he could but unfortunately it's on my head to watch our diets LOL

    I never knew that you should carve beef across the grain before seasoning with salt because it allows natural juices to stay intact – I feel like I know nothing about red meat now!

    Our family LOVES beef! My favorite memory was when I was trying to plan the special dinner we would have after my son made his 1st Communion. My husband thought it would be easier for us to take our relatives to a restaurant but my son requested that his Grandpa make his special pot roast dinner for everyone. My Dad was not only proud but more than happy to grant his grandson his wish. So he, my sister and I cooked 3 pot roasts and all the sides for a wonderful celebration dinner. We made 3 pot roasts so everyone could take home a meal for the next day. Dad's pot roast is the best!

    My grandmother used to make homemade noodles and beef for Sunday dinner when we were kids, and I loved going over there for that meal!!!

    On the site, it was helpful to find a recipe for a t-bone steak for two. That eliminates waste in cooking!
