Yesterday was Hubby’s birthday, but Taylor and I were both under the weather. We postponed his birthday dinner until today. Hubby’s choice of which restaurant we go to.
Wednesday
St. Patrick’s Day!
Corned Beef & Cabbage with new potatoes, Crescent Chicken (from my cousin), broccoli, and Irish Whiskey Bread Pudding
I always make corned beef & cabbage for Hubby on St. Patrick’s Day. It’s very simple, I put in a roughly chopped onion in the bottom of the crockpot. Then add your new potatoes. Now put in
the corned beef and the seasoning package. Let that cook on low for 8 hours. About the last hour or so of cooking I cut the cabbage into wedges and add that on top, this way the cabbage just isn’t all mush. Now not everyone likes that so we always have an alternative. This year my cousin is bringing her crescent chicken (I’ll let you know how it is) and I’m making some broccoli to go with that. Finishing off the meal is some fabulous Irish Whiskey Bread Pudding – oh my it is SO good!
Thursday
Spaghetti, Salad, Garlic Bread
Quick and easy and a favorite of all of ours!
Friday
Fish sticks, Mac & Cheese, Peas
Meals like this are great for the end of my grocery week since it’s frozen, boxed, and canned. It is comfort food for Hubby and fish sticks were on sale buy 1 get 1 free (box)!
Saturday
BBQ Beef Sandwiches, Oven Roasted Potato Wedges, Sweet Corn
The weather is getting closer to BBQ season, but still a tad unpredictable (and Hubby needs to give his grill its spring cleaning & maintenance). Chuck Roast is on sale this week so I will throw that in the crockpot with sauce and let it cook all day and serve it on some crusty rolls.
Sunday
Breakfast for Dinner
I owe Hubby a breakfast for dinner meal. Most likely this will be eggs, hash browns, sausage gravy and biscuits.
Monday
Balsamic Glazed London Broil, Roasted Sweet Potatoes, Roasted Asparagus
