Marvelous Mini Meatloaves

Last summer my cousin made us these little meatloaves one night for dinner. Everyone loved them. Taylor has been asking me to make them since then and I finally got around to it tonight for dinner. These are super easy to make and very easy to please.

The recipe is from Kraft Foods (view the full recipe here). All you need is 1 pound of extra-lean ground beef, 1 cup of water, and a 6oz box of Stove Top Stuffing Mix. I used the Herb stuffing mix tonight, but I think next time I will use the cornbread version.

There are 4 different versions you can make at this point, I opted to make the BBQ sauce version. This means to the above ingredients I also added 1 tsp garlic powder. Mix all together and press into 12 muffin cups. Now put a little BBQ sauce on top of each and bake at 375° F for 30 minutes. Then sprinkle shredded cheddar on top of each and bake another 5 minutes. Remove and let cool for 10 minutes. Enjoy!

In additional to the BBQ sauce version there is an Italian version, a Mexican version, and a Greek version. You just change the one seasoning, the wet topping, and the type of cheese for each. This really is a no brainer recipe that anyone could make. Taylor picked out our sides tonight, we had corn and green beans.
