One Hour Meal Challenge and Giveaway

So Bertolli has offered up a challenge to create a one hour weeknight meal, well not all of our meals are at dinner with varying schedules. As I mentioned the other day, Hubby and I are struggling with some things and so when we have the chance to have a nice quiet meal together, no matter what time of day, we need to take advantage of it. Today he was off work and the house was quiet so I decided to do my challenge as a lunch instead. Rather than take a super short lunch break and having a sandwich, we took the time to cook and set the table and even break out the wine glasses!

Step One – Put out a sign so people will not disturb you

Step Two – Grab the Bertolli Meal Soup out of the freezer and add it to saucepan with 1 cup of water. Bring it to a boil and then simmer for 5 minutes. Really, it is that easy – even you folks who swear you can’t cook can do this! Since the soup is frozen the liquid part has actually been frozen into little squares – kind of like ice cubes – as you can see in the picture on the right.

Step Three – Serve!  My hubby and I thought a nice bit of fresh Parmesan cheese on the top was nice along with a bit of crusty Italian bread. Add a glass of wine, or even if you are not a wine drinker, at least use some pretty wine glasses to make it nicer! Now relax and talk to each other while you enjoy your meal.

We had a nice lunch together and talked and we really enjoyed the soup. It is nothing at all like canned soup – this tasted like I had worked on it all day honestly. There are different varieties, but we tried the Bertolli Tomato Florentine & Tortellini with Chicken today. The tomato base is lovely, not overly acidic or sweet, and just a bit of basil. The spinach (that’s the Florentine part) had a nice flavor and texture and really seemed like fresh rather than frozen had been added. There was plenty of chicken for us. My favorite part was the cheese-filled tortellini! Not all tortellini is created equal – sometimes the cheese inside is so blah, but this was flavorful! This is a soup that really is a meal. The package says serves two and it did very nicely

I found the Bertolli Meal Soups in the freezer aisle at my local Target. I will be buying this again on my own for sure. Sit at the table and turn the tv, computers, distractions off.  Meal time should be a moment away from all of those distractions.

We have been going through a rough patch lately – not fighting with each other, just financially and health wise  and we dont always take the time to sit down and have a relaxing meal.  The ones where we actually sit at a table, without the TV being on, No ipad, no cell phone games etc are special to us. We often look for distractions so we don’t have to talk about what is bothering us, but sometimes that release is all we need to feel better
