Budget Friendly Chicken Change Up

Many of you tried the BBQ Cheddar Crusted Chicken recipe I shared as part of The Hellmann’s Chicken Change-Up and really enjoyed it. This time our focus is on budget friendly chicken change-ups.

Hellmann's Chicken Change-UpThis week my son and I tried another of the recipes from Hellmann’s, Mouthwatering Baked Buffalo Chicken which prices out at $1.74 per serving on average. Everyone’s total will differ a bit. I used the Hellmann’s Light Mayonnaise in the recipe. I also used a full teaspoon of cayenne pepper – we like things spicy. I happened to have plain Panko bread crumbs in the pantry instead of regular plain bread crumbs so that is what I used and I omitted the fresh parsley because it is not a value for me to buy a bundle for 99¢ at the store that I will only use a bit of in the recipe. So while I did make changes in the recipe, the flavor component of the mayo and cayenne pepper were essentially the same. T did not care for this recipe very much. I thought it was ok, but if I made it again I would season the bread crumbs also with at least salt and black pepper. There are a few things I regularly do to try to keep my grocery costs down each week.

  • Shop the Weekly AdI only go to one grocery store for regular shopping, Dierbergs, and each week they have a new ad that starts on Tuesday. I look at that ad to see what is on sale, especially in the meat and produce sections. Then I try to come up with meal ideas for the week based around as many of those as I can. I have a small freezer so I cannot really stock up on a ton of meat deals, so this works for me.
  • Switch Cuts of MeatIf you have a recipe like this chicken one that calls for boneless, skinless chicken breasts, don’t be afraid to change the cut of chicken if something else is on sale. For us, I found chicken tenders on sale cheaper the day I went shopping so that’s what I used instead. Legs and thighs are good bargains also, just increase your cooking times as needed. Other meats like beef and pork have more differences in texture, so make sure you swap cuts that are for similar types of cooking for best results.
  • Use What You Have
    Make sure you go through your pantry and fridge regularly to see what extra things you already have. Use those for this week’s menu. This is really handy when the budget is extra tight on certain weeks.
  • Always Use a List
    If I go to the grocery store without a list I always end up buying so much extra stuff or odd things and forget what I really need. If you make a menu and then create a list it is much easier to not get extras and stay on budget.

    That last one always gets me. I have a list on my phone but forget to use it or I just plain don’t go by the list and yes, it always results in overspending.

      I have tried several different apps on my phones and tablets for shopping, but I find when I am at the store I need an actual piece of paper in my hands. I make the list with my devices, but it must be printed out for me to follow for some reason.

    Combine coupons with store sales when possible.  Last week I bought Pop Tarts at one day store special price of .97 (limit 2) and had a coupon for $1 off two boxes, ended up getting two boxes of Pop Tarts for a total 94 cents!!

    I know that isn’t in the chicken theme, sorry, I don’t have any recipes for Pop Tarts and chicken, but give me enough episodes of Chopped and I might.  :)

    especially with the rise in ANY meat price…  remember that just because a recipe calls for 2# of whatever… doesn’t mean that it’ll taste bad with 1#…

    For meats at least I always look for what is called around here as the ‘managers special’ . These cuts are on sale and usually there are only a few packs of them as they are getting ready to cut more. We also will stretch meat until it hollers- roasts turn into beef and noodles, sandwiches and a few meals!

      I like those managers specials also and get those often. They actually turn out to be when I am more creative even for some reason.

      When I make a regular roast beef I always must have enough to make open face roast beef cooked in the gravy the next day – my favorite comfort meal always!

    I pay attention to the weekly shopping ads and match up coupons with what is on sale. I usually only buy things if I have a coupon for it unless the store brand is cheaper.

    Since it’s just the two of us, I can break meat packs up and freeze them. For larger cuts of meat I always make enough to freeze for a quick dinner.

      I think when my son moves out I will have a hard time adjusting to cooking for just 2 people again.

    I also put my list on my phone, that way I will not overspend. Left overs are big in my family you can take some to lunch for work or work it into dinner rotation.

    I have a budget we stick to pretty well. We’ve had to increase it due to the rising costs of EVERYTHING. I save a ton of money by sticking to my list.

    I use a list as well.  I try to plan our family meals around the grocery sales. I always have on hand frozen chicken tenders or breasts from Costco as a go to.

    We really need to follow some of your leads here. We suck at using what we have and planning around sales. For a lot of people with so many “fixed” bills, our grocery bill is our only “give” on our budget process. Thanks for helping me remember what I already KNOW but need to put better into practice.  When others go hungry and knowing how bad we sometimes get financially…its really a shame and  a “sin” as my mom would say.

    I would try the recipe. I have heard Cayenne pepper is good for digestion AND good for losing weight? Hot and spicy can rev up metabolism.

    I like to use what I have on hand and drum up something that is creative yet healthy.  I got inspired by a friend who acts like Mr. MacGyver in his kitchen.  One time he made a crostini appetizer in which he used cream cheese and puréed raisins that was first soaked in brandy to substitute for goat cheese and figs.  It was yummy and I was impressed by how creative he was and still is!
