Super Easy Veggie Slaw Recipe

I promised you all a vegetarian dish today. We all need to eat more servings of vegetables each day and this is a really simple way to do it. This is actually one of the side dishes I served with the BBQ pulled pork sandwiches the other day. This is something anyone can do – really!

Simply place the veggie slaw in a bowl. This is just a bit of red (purple) cabbage plus julienned carrots, broccoli, and cauliflower. This blend actually has small broccoli florets also. Then toss with Nakano Seasoned Rice Vinegar. How much Nakano you add is based on your own preference. I would say about 1 tablespoon for every 1 cup of slaw mix.

Let sit for 30-60 minutes in the fridge. Toss and serve.

I told you this was an easy recipe! If you wanted, you could of course use your own fresh produce. I just happen to like the convenience of the Mann’s prepackaged veggie slaw. This is also good if you steam the veggies just a bit and add the Nakano Seasoned Rice Vinegar in at the end to coat and serve it warm. This is a great alternative to creamy coleslaws which can have fatty dressings in them. It also is not predominantly cabbage, I like this very much because I much prefer broccoli, cauliflower, and carrots personally.

    Like you served it before this would be great with anything grilled out. I have never tried steaming and then serving slaw warm, might give that a try!

    Seasoned rice vinegar tastes really good, though I often make slaw with apple cider vinegar. I would serve this with grilled black bean burgers!

    Sounds so good! I’ll definitely make this. Perfect along side crab cakes or catfish (or even better, inside catfish po boy..I’m getting hungry!)

    I would serve it with something that had a lot of meat. ;) For me, this would be wonderful but the guys don’t enjoy even the best of veggie dishes unless there’s meat alongside it. I think this would be great with pork chops. Thanks for the share.

      My hubby is very much a meat kind of guy too. He thinks it is not a meal unless there is meat.

    Sounds like an interesting recipe. Personally I don’t eat slaw…and my husband tends to not like the bagged slaw because it’s too hard and chewy (he likes it grated right from the cabbage, carrot, etc). I’ll look around for that rice vinegar, I’m not sure if they sell it near me. jenniferpeaslee at gmail dot com
