Summer salads are still perfect this time of year for many of us. Here in St. Louis late August and early September can be our hottest times of the year. Aunt Nellie’s Beets shared this recipe with me and I had to give it a try. It is a really refreshing and light salad and packed full of fruits and veggies! My grandma always had jarred beets on hand and I grew up eating them and loving them. While I love fresh beets too, they are more work so Aunt Nellie’s Beets are a great solution for me to enjoy a favorite food without all the fuss.
The salad dressing is very simple to make. I like that it uses some of the liquid from the jar of beets. Orange juice and canola oil are the rest of the liquid ingredients. I wish I would have had some fresh basil today, but it had gone to seed in our garden (dang it). So I used a bit of dried basil instead.
This salad is perfect for all those fresh summer fruits available right now. In the recipe they provided options for different kinds of fruits – I love that! Based on what was at the store today and looked good I went with nectarine, blueberries, and honeydew melon. The red pieces are, of course, the beets!
It is simple enough to make this salad up a bit ahead of time and would be wonderful for a picnic, summer get together, or your full dinner after a long hot day. If you are taking it with you somewhere I would wait until it was time to be served to put the prepared fruit onto the lettuce and then dress it. The almonds are sprinkled on top for a nice crunch. Because I love the contrast, I think some fresh goat cheese crumbles would be a wonderful addition to the salad also. Thanks again to Aunt Nellie’s Beets for the great recipe!
