I love garlic. We go through a lot of it in this house. There are very few dishes that I do not add garlic to in some form or another. For me, fresh garlic is the best tasting but some people find it a pain to take the skin off. It really is very simple and you can get out a little aggression.
Take the individual cloves off the whole head of garlic. Place the clove on your cutting board and then take your chef’s knife and lay it flat on top of the garlic. You will hold on to the handle still with one hand, but with the other hand make a fist and smash it down on top of your knife. This will smash the garlic clove underneath the knife.
The skin will easily come off after it has been smashed. Just peel away the skin and then you can use the garlic as it is or chop it up more as you need it for your recipe.
Another tip for using fresh garlic. If you notice a small green sprout in the center of your garlic, take it out. This has a more bitter taste to it so you don’t want it in your dish. If you use the smashing method you can easily get the sprout out of the center of the clove.
