Grilled Pineapple with Butter Rum Sauce Recipe
We love having grilled pineapple at our house – it is delicious! During the summer when Hubby grills more we have it quite a lot. This recipe I got from the Caribbean Shopping Channel and had to share because it sounds delicious! You can do this on an inside or outside grill. I think this winter when it is cold and gloomy I will make a tropical dinner one night and include this for dessert.

Grilled Pineapple with Butter Rum Sauce
- 8 tablespoons unsalted butter (1 stick)
- 1 cup lightly packed brown sugar
- 1/2 cup dark rum
- pinch nutmeg
- pinch cinnamon
- pinch allspice
- 8 slices fresh pineapple wedges
|In a small saucepan, cook the butter, sugar, rum and spices over medium heat, stirring, until the sugar is dissolved and the butter melted. Bring to a simmer and let cook for about 10 minutes longer, stirring occasionally, until the sauce is slightly syrupy and coats the back of a spoon. Keep warm. |
Heat the grill and brush or spray it with a touch of oil so the pineapple does not stick. Grill the pineapple slices until warmed through and caramelized, about 10 minutes on each side.
Serve immediately with the warm sauce.
