Grilled Pineapple with Butter Rum Sauce

We love having grilled pineapple at our house – it is delicious! During the summer when Hubby grills more we have it quite a lot. This recipe I got from the  Caribbean Shopping Channel and had to share because it sounds delicious! You can do this on an inside or outside grill. I think this winter when it is cold and gloomy I will make a tropical dinner one night and include this for dessert.

Grilled Pineapple with Butter Rum Sauce

Ingredients

  • 8 tablespoons unsalted butter (1 stick)
  • 1 cup lightly packed brown sugar
  • 1/2 cup dark rum
  • pinch nutmeg
  • pinch cinnamon
  • pinch allspice
  • 8 Slices fresh pineapple wedges

Directions

In a small saucepan, cook the butter, sugar, rum and spices over medium heat, stirring, until the sugar is dissolved and the butter melted. Bring to a simmer and let cook for about 10 minutes longer, stirring occasionally, until the sauce is slightly syrupy and coats the back of a spoon. Keep warm.

Heat the grill and brush or spray it with a touch of oil so the pineapple does not stick. Grill the pineapple slices until warmed through and caramelized, about 10 minutes on each side.

Serve immediately with the warm sauce.

    I will love just about anything with brown sugar! I do like pineapple a lot, so this looks like a winner to me!! Easy recipe too.

      I love brown sugar too – I think I could cut down the amount for this recipe though too and it would still be good

    I love pineapple but either I eat too much of it or am slightly allergic. Hubby doesnt eat it so when I but one I eat the whole thing. I do have him grill some in the summer now and then. I might make him do this recipe!
